Remember last week’s green salsa blog post? This ‘Best Enchiladas Recipe’ is the greatest way to try it out! It’s a recipe that has been in Nils’ family for generations, and that will quickly become your favorite.
The term <Enchiladas> is basically short for a stuffed tortilla with salsa on top, and it’s one of Mexico’s main recipes. Actually, there are thousands of Enchiladas recipes out there! With infinite options of salsas and fillings, you can imagine the possibilities. We’ve had scrumptious ones filled with cooked hibiscus flowers or with potato, zucchini, and carrot mixture.
This recipe, for example, more traditional, has a beef & potatoes filling (also known in Mexico as ‘picadillo’) with spicy green salsa on top. Is your mouth watering already? Just wait until you try them…
Best Enchiladas recipe
Serves: 6
Ingredients
- 1k ground beef
- 1 big potato diced into small cubes
- Vegetable oil
- 2 red tomatoes
- 1 medium garlic clove
- 1/4 onion
- 1k corn tortillas
- Salt & pepper
- Green salsa (see recipe, here)
- Sour cream
- Queso fresco or shredded manchego/mozzarella
Preparation
Filling
- In a large pan, fry two slices of onion with 3 tablespoons of vegetable oil. When the onions turn golden, remove them and add the potatoes and the ground beef. Move constantly until potatoes are slightly tender.
- In a blender mix the tomatoes, garlic, onion and 1 tbsp of ground pepper. Strain it and pour it into the beef/potato mixture. Salt to taste.
- Let it cook at low heat for 10-15 minutes or until the mixture absorbs most of the juices & tomato seasoning.
- Set aside.

Enchiladas
- Heat vegetable oil in a medium-size pan; enough to cover the bottom. Once the oil is hot, fry the tortillas you’ll need for about 5 seconds on each side. You’ll serve them folded in half, so they should feel soft, not crunchy. You may need to add more oil as you go, depending on the number of enchiladas you’re preparing.
- Place them on a paper towel to drain the excess oil.
- On a separate pan, heat up the green salsa.
- Dip the tortillas lightly in the salsa; fill them with the ground beef mixture, and add more salsa on top.
- Serve them with a drizzle of sour cream and cheese.
